After you put your letters on the wood you can either carve the letters by hand with a chisel or use a handheld rotary tool to work faster.
As an example here is something i did that uses both vbit and regular small end mill.
For cut out types use what those here suggest in the vbits.
Then cut to the pattern.
Then when done i just peel away the pattern.
